Happy All Hallows Eve! I typically don’t get too into Halloween…I don’t know why, but it’s never been a big holiday for me (well, except when I dressed up as a punk/pop rocker in my school age years). Maybe it’s because orange isn’t my color, or the fact I could never come up with a clever costume, but my Halloween spirit is limited to a modern take on pumpkin decorating and pumpkin flavored treats. These pumpkin dark chocolate chip cookies from Illustrated Nutrition are a perfect way to celebrate the day. I made them this past Sunday and look forward to ending each day with one as a treat!
