Breakfast Smoothies

Strawberry Smoothie

Last month I mentioned one of my intentions for 2014 is to eat breakfast each day. I’m happy to report I’ve done a pretty good job the past month! I love schedules and routine except when it comes to my meals. I try to mix it up with different breakfast options so I don’t get bored. At least 2 mornings a week, I start off my day with a smoothie.  I rotate between two favorites; a green smoothie and carrot/fruit smoothie.  I use a Blendtec, but any high powered blender (Vitamix, NutriBullet) will work.

Strawberry Smoothie (serves 2)

12 oz. coconut water
handful of cut carrots
frozen strawberries
1 apple (any variety, gala or pink lady are my picks)
1/2 lemon

Combine in blender and enjoy!

 

Green Smoothie (serves 2)

12 oz. coconut water
2 handfuls of organic spinach
1 chopped carrot
Frozen strawberries and blueberries
1 banana
Agave nectar

Combine in blender and enjoy!

 

And for the mornings that I run out of time or ingredients to make my own smoothie, I can stop at Nektar Juice Bar to pick up one on the go. Nektar has many locations in Southern California and just opened a location in North Scottsdale. I’ve already had the Peanut Butter acai bowl and it’s fantastic! They also have juice and smoothies and I’m considering a juice cleanse too!
