Chicken Quinoa and Olive Stew

 

 

My plans for the weekend included making this chicken, quinoa and green-olive stew recipe to share with you today. It’s been a favorite winter dish of mine for a couple of years. I like to leisurely prepare it on a Sunday and have leftovers for the week. My time saving tip is to use a rotisserie chicken instead of boiling your own.

 

Alas, sometimes life throws you a curve and your plans change. This week I started twice weekly doctor appointments. An ultrasound every Tuesday and non-stress testing on Fridays. Non-stress testing includes monitoring the baby’s heartbeat and uterine contractions for me for a period of 20-30 minutes; the objective is to make sure the baby is moving and healthy. During the testing, we discovered I was having regular contractions. Long story short, I was not in active labor so no baby yet! I did have to go to straight to the hospital for some testing to figure that out though. After a couple of shots to stop the contractions, I was sent home with instructions to rest and drink lots of fluids. I’ll admit that I was scared and shed more than one tear. I knew he’d be okay if he was born, but it was still early and another couple of weeks would be much better. We’re really relieved it turned out the way it did.

 

All is well, but clearly I wasn’t doing a lot of grocery shopping and cooking this weekend. So that’s my reason for the short and sweet post today. Have a great start to your week!
