Mint Chocolate Brownies

I don’t share too many recipes, because let’s face it, creating in the kitchen isn’t my strength. With St. Patrick’s Day a couple of weeks ago and Easter coming up this weekend, I was reminded of these mint chocolate brownies my Mom used to make. While they don’t scream healthy, they are delicious! And the mint hue makes them perfect for St. Patrick’s Day or Easter!

 

Mint Chocolate Brownies

First Layer
3/4 c. sugar
1/2 c. butter, softened
3 eggs, beaten
1 c. flour
1/2 tsp. salt
16 oz. chocolate syrup

Heat oven to 350. Mix all ingredients together and spread in a 9×13 greased and floured pan. Bake for 30 minutes.

Second Layer
2 c. powered sugar
1/2 c. butter, softened
2 tsp. milk
1 1/2 tsp. peppermint extract
Green food coloring

Mix all ingredients together until smooth. Spread over cold brownies.

Third Layer
6 oz. chocolate chips
1/4 c. butter

Melt chocolate chips and butter together on stovetop. Spread on top and refrigerate for 15 minutes.
