These no bake energy bites are perfect for a quick pre- or post-workout snack. The oats, peanut butter and hint of chocolate have fueled me through many runs and Insanity workouts. There are many recipe variations; this particular version is courtesy of Tosha Beverlin and happens to be my favorite.
1 cup rolled oats
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup shredded coconut (unsweetened)
1/2 cup ground flaxseed
1/2 cup mini chocolate chips (can substitute carob chips or raisins)
1 tsp vanilla
Mix all ingredients and roll into balls. Tip: after combining ingredients, place bowl in the refrigerator for 30 minutes. This helps with rolling of the bites.
