Dinner: Back to Basics

Back to Basics

I found myself standing in Whole Foods one Sunday trying to come up with dinner options for the upcoming week. While cooking isn’t my passion, I do enjoy eating healthy most of the time. It’s a bonus if I can eat healthy without spending a lot of time in the kitchen. Lucky for me, I found some seasoned burger patties and then headed to the produce section to look for veggies to pair with them. Sweet potato fries have become a favorite, especially because they are really easy. Just peel, cut, toss with olive oil and season with salt and pepper. Throw them in the oven for 20 minutes at 400 and you’ve got a healthy companion to a main dish. Add a salad and it’s a meal! Sometimes the best meals are the ones that aren’t meticulously planned. It’s good to get back to basics!
